First, bone out breasts and thighs.  Clean thoroughly.  Tenderize pieces using hammer or tool.  Make sure you beat the muscle side of the meat to thoroughly penetrate the muscle membrane.  Each piece should look somewhat mashed and ready to fall apart.  Flour each piece thoroughly with a seasoned flour mix of your choice.  The flour will penetrate the tenderized areas also.  Then brown each side in skillet with lid cracked slightly using vegetable oil or until done to your liking.  Remember pheasant cooks faster than you think so if you like it moist, don't overcook it.
