Pheasant Ala Creme

2 pheasants cut up in pieces
1 1/2 cup seasoned flour
1 cup vegetable oil
1 cup chicken broth
2 T minced shallots
1 1/2 pints heavy cream
6 T cognac
6 T dry white wine
1 T salt

Roll Pheasant in flour and brown in skillet with hot oil.  Drain.
Place Pheasant in casserole dish, add chicken broth and shallots.
Place in oven and bake @ 350 degrees for 1 1/2 hours.
Add cream, cognac, wine, 1 T salt.
Continue baking @ 350 degrees until tender and sauce is thick,
about 1 1/2 hours.  Season to taste.
